Scientific Description

Gluconate is the chemical structure which consists of a six-carbon chain with five hydroxyl groups positioned correspondingly as that in the open chained form of glucose. It acts as δ-lactone in the food industry as acidulant. It improves the mild sour taste and complexes possible traces of heavy metals. It is even used in construction, textile and pharmaceutical industries because of its water-soluble complexes with various kinds of metal. The process of gluconate resembles more of enzymatic conversion and less of the microbial process.
